Picked a small batch of beans last night, 6 pints worth. Will have LOTS more in a few days blooms are EVERYWHERE! YAY!
Canning Green beans:
Prepare your green beans by steming and snapping/frenching them. Wash throughly in cold water to keep crisp. Take your clean sterilzed jars and add some garlic, green onion, and 1 tsp +/- of canning salt to each pint jar. Pack in snapped green beans. Add warm water to jars leaving about 1/4" headspace. Put together HOT lids and rings- screw on tightly. Add jars to pressure canner and can at 10lbs pressure for 25 minutes.
When canner has cooled down and pressure is all the way to ZERO take lid off and remove jars. Once jars have sealed remove rings and store in a cool dark place.

So pretty & so yummy. I love to can our green beans & eat on them all winter. I pray we get lots of green beans this year.
