Baby Muscovies! LOTS of them!!

Yesterday our last white duck finally hatched out her babies.  Man it takes a long time for muscovies to hatch! 40 days!! which is a long time compared to the 18-21 days it takes chickens!  My husband had gave up on the eggs hatching so I candeled them last week (not an easy task with an over protective mother duck!!) Most showed good development, I threw out a few clear ones, which still left 21 eggs in her nest.  She has 19 babies now!! 20 hatched but 1 died-there is still one egg in there that I think will hatch-it is pipped and I could see movement!  She is such a good mama!

This picture was taken yesterday morning when there was still a few eggs that hadn't hatched yet, now there is only 1 egg left.  Most of them are all yellow (whites or chocolates!! I have a few broken black ones that will be beautiful)

We had one of our silkie hebs sitting on 1 silkie egg out in the barn but a racoon got them both.  Our fuzzy little yellow kitten has been gone for 2 days now and I found one of the others in the yard 2 days ago dead. :( So now we only have 3 of the little kittens left.  I hope nothing happens to them.

Yesterday was Chris' 27th birthday.  We didn't do too much, I think we are going to try and go camping sometime in the near future.  I have never camped with the kids, so that we be an experiance to say the least.

End of a long week

Whew this week has went by fast, but has seemed very long if that makes sense!  I feel like I never get a break.  I canned blueberry pie filling the day before yesterday, went to the Amish stores and picked up a few things, and came home and tried to do some laundry.  Yesterday I had to go to Bolivar to get some chicken feeds and I needed to go to the dreaded WalMart to get toilet paper.  All I needed was toilet paper and I spent $64.87!! There were a ton of cute baby clothes on clearance so Sophia got some new clothes...then I found me a new shirt for church and then I remembered that Chris needed a new dress shirt too... and had to get some gel soles for my cowboy boots. THE reason I HATE that store! lol

After getting home from Bolivar I mowed the yard yesterday, it was getting tall and thick.  I am just so tired this week everything seems to take forever.  Since Tuesday I have been going to Revival at Hopewell in Urbana with Lindsey.  There has been such a great feeling there and several in the Altar.  I just pray that I will hear of good news soon. 

Everything seems to be going down hill.  This morning I found out that my grandmother fell last night/evening and broke her hip.  She will be 83 in December, but is as healthy as a horse.  I hope she comes out of this okay.  She had surgery this morning and they put a pin in it and said that her bones are all healthy.  I hope she recovers well.  We are going up to see her this evening after Chris gets home from work. 

I am so behind in my housework it is driving me nuts.  Why do we have soooo many clothes?! ahh!!  I need to donate a couple bags soon.  I have 1 30 gallon trash bag already full of clothes. 

I really wish I could back a trailer up to the front door and throw most of it out the door!

canning green beans today




Picked a small batch of beans last night, 6 pints worth.  Will have LOTS more in a few days blooms are EVERYWHERE! YAY!


Canning Green beans:

Prepare your green beans by steming and snapping/frenching them.  Wash throughly in cold water to keep crisp.  Take your clean sterilzed jars and add some garlic, green onion, and 1 tsp +/- of canning salt to each pint jar.  Pack in snapped green beans.  Add warm water to jars leaving about 1/4" headspace.  Put together HOT lids and rings- screw on tightly.  Add jars to pressure canner and can at 10lbs pressure for 25 minutes.

When canner has cooled down and pressure is all the way to ZERO take lid off and remove jars.  Once jars have sealed remove rings and store in a cool dark place.

how do you like the new layout?

I finally got the template thingy to do what I wanted it to. lol I have been having so much trouble these days with this thing.

I have tried to respond to a comment on my last post 5 times and google just logs me out everytime! Seriously??

So to the question if I made up the beanie weeny recipe:

Yes I did make this recipe up. I just did it the way I was brought up making them and tripled it. lol. So no it is not a USDA approved recipe but I did google and found where other people had done similar things. I am not one to only follow the Ball canning book for recipes. I like to can things we actually eat. :)

^^^This was the answer I had typed over and over! argh so I decided to just post it.  It logged me out 6 times the last time I tried to respond.  Since when can't I comment on my own blog post?!?

I made a peach cobbler today- it turned out really well.  Was a new recipe for me.  Here is the recipe except I used some peach pie filling that I canned up last year.  I doubled the recipe and made it in a9x13 and used 2 quarts of filling.
Peach Cobbler

Filling
2 1/2 lbs. ripe but firm peaches (6 to 7)
1/4 cup sugar
1 teaspoon cornstarch
1 tablespoon juice from a lemon
pinch salt

Buscuit Topping
1 cup (5 ozs.) unbleached all purpose flour
3 tablespoons plus 1 teaspoon sugar
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
5 tablespoons cold unsalted butter cut into 1/4 inch cubes
1/3 cup plain whole milk yogurt (non fat yogurt will not work)

1.For the filling: Peel peaches then halve and pit each. Using small spoon, scoop out and discard dark flesh from pit area. Cut each half into 4 wedges. Gently toss peaches and sugar together in large bowl. Let stand for 30 minutes, tossing several times. Drain peaches and put 1/4 cup juice, cornstarch, lemon juice, and salt into bowl and whisk. Toss mixture with peaches and place in 8 inch square glass baking dish. Bake in 425 degree oven for 10 minutes.

2. For the Topping: While peaches are baking, in food processor, pulse flour, baking powder, baking soda, salt to combine. Scatter butter cubes over and pulse until mixture resembles coarse meal, about 10 1 second pulses. Transfer to medium bowl, add yogurt, and toss with rubber spatula until cohesive dough is formed (don't over mix dough or biscuits will be tough). Break dough into 6 evenly sized but roughly shaped mounds and set aside.

3. Assemble and Bake: After peaches have baked 10 minutes, remove peaches from oven and and place dough mounds on top, spacing them at least 1/2 inch apart (they should not touch). Sprinkle each mound with portion of remaining i teaspoon of sugar. Bake until topping is golden brown and fruit is bubbling, 16 to 18 minutes. Cool cobbler on wire rack..



Tonight we are having roadkill for supper- literally!  Chris hit a turkey with his dumptruck this afternoon and cleaned it up and brought it home.  Guess he is cooking supper!  I really like fried turkey.  Will probably have mashed potatoes with it and hominy! YUM

Wish it was sunny- I would make sun tea.

canned beanie weenies last night

I made a big pot of beanie weenys

3 cans of Pork N Beans
2 cans of Kidney Beans
1 small can of tomato sauce
4 T Brown Sugar
some ketchup to taste
2 packages hot dogs, sliced about 1/4 inch thick

Cook through.  Ladle into jars and process at 10 lbs pressure for 75 minutes for pints or 90 minutes for quarts.


I think they turned out pretty good.

I opened up a jar of my cabbage soup I made awhile back yesterday for lunch.  It was sooo good!


Am thinking about trying to bake cakes into jars and sealing them...they were talking about it the other day on a group I am a part of on FB.  It seems really simple...

Tuesday

Well not a lot has been going on around here, kinda feels like the same oh same oh.

But I guess that is what happens in the summer.  It is already so hot here and it is only the first part of June.  Kinda ruined some plans to get more things done outside since the kids don't want to stay outside all day long.  They get too hot anyway.

Cooper burned his hand last week on the muffler of the tiller.  He has another appt today with the Burn clinic at St Johns.

I have chicks hatching in the incubator this week they are due tomorrow so I hope they start hatching soon!  I have a few pips and peeps but not much else is going on.  I can't wait to see what they look like.  I don't know if I have ever seen a standard Cochin chick or not!

We finally have a table to eat at!  I found one at Vendor's Mart and fell in love.  Plus it was only $12!  it is a vintage 60's style one--metal with laminate top.  The top is a turquoise blue color with a design in it.  We put it in our living room where Sophia's crib was.  We ate at it for the first time last night.  It was nice to be able to eat as a family and where it is postioned you can't see the tv.

We sold some bunnies on Saturday- 4 of them.  Didn't do very good on them though.

I think Cooper is mad at grandma and papa but he won't actually say he is.  He treats papa really bad and glares at him though.  Chris and I were talking about it and I think it is because he is jealous that Jake gets to do everything with them since he lives there.  I don't know if I should say something to mom and dad or not. 

We went to Rock Praire on Sunday to church again.  Chris wanted to go this time.  I really like it over there and even when I was in high school I really felt at home there.  I don't know what to do.  I don't know if God is leading me there or if I just want to go there.  It is such a fine line, but I do know I felt much better Sunday.  I hadn't been able to pray in a really long time and there was so much feeling at Rock Praire-- more feeling than I had felt in a long time anywhere.  I feel like there is so much responsibilty placed on my shoulders at this time.  Chris hasn't said whether he is saved or lost and I haven't had a burden to pray for his salvation in a long time.  In stead I feel like he needs to say something.  But I don't know.  Then I have the kids to worry about.  They are young now but they will soon reach the age of accountability and I want to be sure to be in a good church when that happens.  I was 9 when I first felt conviction...but wasn't saved until I was 14.

But then I look to Half Way and that is always where the Barhams have been members.  Dad is a deacon and Poppy was one.  Everyone is a member there and that is where my membership currently stands. 

Just pray for me.
